Cinnamon Apple Cider Muffins

We went apple picking last week and I currently have about 16,345 apples sitting on my kitchen counter. Well, maybe not that much, but close enough! I have no idea what to do with them all. Of course my kids want an apple pie, and you’re basically obligated to make an apple crisp in the fall, but what else?

Muffins of course. And not just any muffin. I’m talking about cinnamon muffins with sweet apple cider and tender chunks of chopped apple.

These muffins are just a bit healthier than your average muffin. They include whole wheat flour, chunks of apple, and yogurt & applesauce. Not only are they lightened up, but they are so soft & delicious and full of warm Fall spices.

Plus, you’ll want to bottle up the smell of them cooking in the house. The smell is better than a candle 🙂

 The original recipe calls for all whole wheat flour. You could certainly use all whole wheat, but I found them to be very tough and dense. Using part white whole wheat still gives the “wheat flavor” to the muffin, but produces a softer muffin.

As far as the apple goes just pick your favorite. We happened to pick golden delicious apples and empire apples. I used a golden delicious (my favorite apple!!). Red delicious apples I am guessing may be too sweet. Your best bet would be a gala, granny smith, or golden delicious variety.

Ingredients
muffin

  • 4 tablespoons butter, softened
  • 1/3 cup plain or vanilla yogurt
  • 1/3 cup granulated sugar
  • 1/3 cup light brown sugar
  • 2 large eggs
  • 1 cup white whole wheat flour
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup applesauce (sweetened or unsweetened)
  • 1/3 cup apple cider
  • 1 teaspoon vanilla extract
  • 1 cup peeled, cored and chopped apple (about 1 large apple)
  • cinnamon/sugar topping
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon cinnamon


Instructions

  1. Preheat the oven to 375 degrees. Lightly grease a 12-cup muffin tin with cooking spray, or use paper liners. Set aside.
  2. In a large mixing bowl, or stand mixer, beat together the butter, yogurt and sugars until the mixture is light and fluffy. Add the eggs and beat well.
  3. In a medium bowl whisk together the flour, cinnamon, nutmeg, baking soda and salt.
  4. Add the dry ingredients to the batter. Mix until just combined. It's ok if there are a few dry spots. Mix in the applesauce. Stir in the apple cider and vanilla. Gently fold the apples into the muffin batter.
  5. Divide the batter evenly among the 12 muffin cups. They will be nearly full.
  6. Sprinkle 1/2 teaspoon of cinnamon and sugar mixture on top of each muffin cup.
  7. Bake for 17-20, minutes or until a toothpick inserted in the center comes out clean (watch the muffins carefully since each oven may vary slightly in temperature affecting exact baking time).
  8. Let the muffins rest in the pan for about 5 minutes and then move to a wire rack to cool completely.
