AMAZING RED VELVET CAKE OR CUPCAKES RECIPE

I know what you are thinking…not another Red Velvet Cake / Cupcake recipe, right?  I know it’s become such a craze the whole Red Velvet Cake, Red Velvet Cheesecake, Red Velvet Brownies…and so on.  I just had to make these and share these Amazing Red Velvet Cupcakes recipe with everyone as it is truly an amazing recipe.




I would admit that I have used a cake box to make Red Velvet Cake in the past and that I have tried so many recipes to make my own version and I really do like this recipe.  Although knowing me, while I love this recipe for Red Velvet Cake, I know I’ll probably still try others just to compare.  I added a twist to this recipe by adding espresso powder and mini chocolate chip morsels.  Red Velvet cake is really just a chocolate cake with red dye…and let’s not forget the buttermilk and distilled vinegar (right vinegar in a cake???)

Anyway it’s a super easy cake recipe…you basically sift your dry ingredients, excluding the sugar, in a bowl and set aside

Ingredients

  • 2 1/2 cups Flour
  • 1 1/4 teaspoons Cocoa Powder
  • 1 teaspoon Espresso Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 1 1/2 cups Sugar
  • 1 cup Buttermilk
  • 1 1/2 cups Oil (not olive oil)
  • 2 large Eggs
  • 1 teaspoon Vinegar, distilled
  • 1 teaspoon Vanilla extract
  • 1 ounce Red Food Coloring (1 bottle)
  • 1/2 cup Mini Chocolate Chip Morsels

Directions

  1. Preheat your oven to 350 degrees and line your cupcake tin with liners (I used extra large liners)
  2. In a medium size bowl, sift your flour, cocoa powder, espresso powder, baking soda and salt and set aside.
  3. In a separate bowl, add your sugar, buttermilk, oil, eggs and vinegar. Using a whisk, mix all the wet ingredients until well combined.
  4. I used a kitchen aid so I dumped my wet ingredients into the bowl and added the dry ingredients and mixed for about 2 minutes or until well combined. If you do not have a kitchen aid, just add your dry ingredients on top of the wet ingredients and mix for 2 minutes or until well combined.
  5. Add your vanilla extract and red food coloring and mix until all incorporated, add your mini chocolate chip morsels and mix again until all incorporated.
  6. Using an ice cream scooper, scoop out equal portions of the mix and bake for 22-25 minutes for normal sized cupcake or 30-32 minutes for extra large.
