PEANUT BUTTER CUP SKILLET COOKIE

Alright, I don’t know how you guys feel about it but as far as I’m concerned today’s Peanut Butter Cup Skillet Cookie recipe has it all. Chocolate chip cookie dough, peanut butter cups, more chocolate chips, because seriously who can get enough chocolate?, all baked together into a cookie pie that oozes peanut butter and chocolate when you cut into it. I’m drooling…

This is the perfect recipe to make with any of that leftover Halloween candy you might have but it’s awesome any time of year! It just takes some store bought chocolate chip cookie dough (or your favorite homemade dough), 5, or 6, maybe more (don’t let me hold you back!), peanut butter cups, some extra chocolate chips, and a maybe a scoop or two of ice cream, because really who wants a warm cookie skillet without a scoop of vanilla ice cream melting over it. You press the dough down into the bottom of a greased 6-inch cast iron skillet, and up the sides to make a kind of pie crust. then you fill it with peanut butter cups and chocolate chips. You seal everything in with another layer of cookie dough over the top and then you pop the whole thing into the oven to bake.

When it comes out all of the peanut butter cups and chocolate chips have melted together inside of the cookie and when you dig a spoon into it that first bite is the perfect combination of over the top chocolate, with a little peanut butter and lots of cookie goodness. A cookie skillet is the perfect dessert recipe for two, if you can bring yourself to share. I may or may not be able to finish one off all on my own, but I rarely get the chance since the smell of baking cookies brings people running to the kitchen at my house!


Ingredients

  • 30 ounces tube Chocolate chip cookie dough
  • 1 cup Chocolate Chips
  • 5-6 Chocolate Peanut Butter cups

Instructions

  1. Preheat oven to 350°F.
  2. Divide cookie dough in half and press one half of dough into the bottom of the skillet and up the sides.
  3. Fill center with chocolate peanut butter cups and chocolate chips.
  4. Place the rest of the dough on top.
  5. Bake for 20-25 minutes or until edges are brown.
  6. Serve with ice cream!
