Snickers Cheesecake Brownies

Do you want a drool-worthy dessert for your next social gathering? Snickers Cheesecake Brownies are the B-E-S-T!! No kidding. These brownies rock. They start with a regular chocolate chip cookie dough, but instead of chocolate chips, I used Snickers Baking Bites. I found them at Wal-Mart about a month ago and snatched them up from the shelf as soon as I saw them! I added a luscious cheesecake layer and voila! The ultimate, perfect brownie. Yep.

I will make one recommendation though. I didn’t want to chop up the Snickers Baking Bites, so I had to make a course correction so to speak when I was making these. Even though I initially mixed the baking bites in with the cookie dough, I don’t recommend it.

They are so big that they don’t spread into the pan very well. Instead, I ended up digging them out of the cookie dough and sprinkling them on top of the cheesecake layer. I found that worked much better and it didn’t affect the taste at all. For people like my husband, who is a Snickers connoisseur, this is the perfect dessert. Top it with a little Snickers ice cream and you are all set to jet!

We hired three very large trucks and 9 total movers last week when we moved into our new home. Since I had made up so many of these cheesecake brownie recipes, I handed out a container to each of the guys. They were wonderful. I’ve never had movers take such awesome care of my furniture before. They wrapped everything in blankets and then in a plastic wrap to protect the furniture. They also were very careful hauling stuff into the house so the walls, doors and furniture didn’t get dented. I have to admit I was extremely impressed.

INGREDIENTS

  • COOKIE DOUGH LAYER:
  • 1 cup Land ‘O Lakes unsalted butter softened
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 2 tsp. vanilla
  • 1 tsp. baking soda
  • 1/2 tsp. sea salt
  • 3 1/2 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods
  • 2 10-oz. pkgs. Snickers Baking Bites
  • CHEESECAKE FILLING:
  • 2 8-oz. pkgs. cream cheese softened
  • 2  tsp. vanilla
  • 2 large eggs
  • 1 cup sugar

INSTRUCTIONS

  1. COOKIE DOUGH LAYER:
  2. Mix butter, sugars, eggs, vanilla, baking soda and salt with an electric mixer until well-mixed.
  3. Stir in flour until well combined.
  4. Spray 11”x17” jelly-roll pan with cooking spray.
  5. Press about ½ to 2/3 of the cookie dough into the pan.
  6. Spread cream cheese filling over top of cookie dough layer.
  7. Crumble remaining cookie dough over top of the cream cheese layer.
  8. Sprinkle all of the Snickers Baking Bites over top.
  9. Bake at 350° for about 35-40 minutes, or until toothpick inserted in center comes out clean.
  10. CHEESECAKE FILLING:
  11. Mix cream cheese, eggs, vanilla, and sugar with an electric mixer until smooth.
  12. Pour over cookie dough crust layer and cover with remaining dough.
  13. Sprinkle Snickers Baking Bites on top. Bake as directed above.


RECIPE NOTES
NOTE: I originally mixed the Snickers into the dough but found it too difficult to spread such large pieces on the baking sheet. So I removed the Snickers baking bites and pressed the plain cookie dough into the pan. Topped with cream cheese layer, then remaining cookie dough and then added the Snickers baking bits on top. This worked a lot better than mixing the Snickers baking bits into the dough.
