Antioxidant-packed Matcha Blueberry Muffins (GF)

If there is one fruit I love to eat everyday, it’s blueberries! Why? Not only are they sweet, tangy, and slightly tart, but they are also overflowing with skin- rejuvenating and immune-enhancing antioxidants. And if there is one drink I love to drink everyday, it’s Matcha green tea!


So why combine these two delicious and nutritious superfoods into one amazing muffin: The antioxidant-packed blueberry Matcha muffin! These delicious make the perfect breakfast, lunch, snack, and even dessert!

Ingredients:
Oatmeal... 1 cup
All purpose GF flour... 1 cup
Almond flour... 1/4 cup
Baking powder... 1 1/2 tsp
Baking soda... 1 1/2 tsp
Salt... a dash
MariMatcha Matcha powder... 1 tbsp

Eggs... 2
Brown sugar, packed... 1/2 cup
Coconut oil... 2 1/2 tbsp
Coconut milk... 1/2 cup
Blueberries... 1 cup

Directions:

  1. Mix the oatmeal in with the GF flour, almond flour, baking powder, baking soda, and salt. Stir until well combined.
  2. Add in the MariMatcha Matcha powder and mix until there are no clumps of Matcha.
