FLUFFY PUMPKIN PANCAKES

I spend half my life on Pinterest. Literally half my life… maybe even more. It’s just so addictive, I can’t stop. Lately, it seems like everything on Pinterest is pumpkin related. Pumpkin spice lattes, pumpkin waffles, pumpkin donuts, pumpkin, pumpkin, pumpkin. And rightly so, because around this time of year we all start getting in the festive mood and along with that comes the cravings for not only pumpkin, but all the warm spices.


Ingredients


  • 1 Cup Flour (wholewheat/oat are good healthy alternatives).
  • 2 Tbsp Sugar/sweetener
  • 1 tsp Baking Powder
  • 1tsp Baking Soda
  • 1 1/2 tsp Vinegar
  • 1 Egg (or flax egg)
  • 1 Cup Milk/Almond Milk
  • 1 Tbsp Coconut Oil
  • 1 Cup Pumpkin Puree
  • 1 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • 1/8 tsp Ground Cloves
  • 1/2 tsp All Spice

OPTIONAL TOPPING:

  • Salted Caramel
  • Coconut Whipped Cream

Instructions


  1. Make the Pumpkin Puree if using homemade puree.
  2. Then combine the pumpkin puree with all the other wet ingredients in one bowl.
  3. Combine all the dry ingredients in a separate bowl.
