Healthy Turtle Brownies

It’s almost summer time, can you feel it!? I mean, literally, can you feel the humidity? Because I can. It’s been raining and humid and hot here for the past two weeks. But that just means avoiding the sticky sweatiness outdoors and doing lots of baking indoors! In particular, baking these healthy turtle brownies. I may or may not have made them 3 times already.

There are 2 things I love to do outdoors – bike riding and eating. Point me in the direction of the restaurant with a patio! Oh and maybe a pitcher of sangria. Perfect summer activities in a nutshell! But, I’m getting off track…

We’re here to talk about theeeeeessssee – ultra luscious, fudgy, chocolatey brownies with a decadently creamy caramel topping, all sprinkled with walnuts and chocolate chips. Seriously, they’re the ultimate healthy turtle brownies!


Ingredients

  • Brownies
  • ½ cup water, warm
  • ½ cup unsweetened dark cocoa powder
  • 1 tsp instant coffee – optional
  • 1/3 cup chocolate chips (any kind – dairy, non-dairy, dark, milk, etc)
  • 1 large egg, room temperature*
  • 1/3 cup almond butter
  • ¼ cup maple syrup
  • ¼ cup milk of choice
  • 1 tsp vanilla extract
  • ½ cup soy protein powder , unflavored or vanilla
  • ¼ cup oat flour
  • ½ tsp salt
  • ¼ tsp baking soda
  • Caramel
  • ¼ cup almond butter
  • ¼ cup milk of choice
  • 1/8 cup maple syrup
  • 2 tsp cornstarch
  • ½ tsp vanilla extract
  • Pinch of salt
  • Topping
  • ¼ cup chocolate chips
  • ¼ cup walnuts , chopped

Instructions


  1. Preheat the oven to 350 F and line an 8 X 8 square pan with parchment paper.
  2. For the brownies, heat the water in the microwave until warm to the touch (about 45 seconds – 1 min.)
  3. In a small, heat safe bowl, whisk together the cocoa powder and instant coffee.
  4. Add the warm water, and stir until there are no lumps.
  5. Add the 1/3 cup of chocolate chips, and stir until they’re melted.
  6. In a large bowl, whisk together the egg, almond butter, maple syrup, milk, and vanilla extract.
  7. In a separate bowl, stir together the protein powder, oat flour, salt, and baking soda.
  8. Add the dry ingredients to the wet. Stir until smooth and there are no more clumps.
  9. Bake for 24-26 min. or until a toothpick inserted into the center comes out with small crumbs.
  10. While the brownies are baking, make the caramel: in a medium bowl, stir together the almond butter, milk, maple syrup, cornstarch, vanilla extract, and salt.
  11. Allow the brownies to cool slightly once out of the oven (about 10 min.), then spread the caramel evenly on top.
  12. Sprinkle the chopped walnuts and chocolate chips on top of the caramel.
  13. Allow the brownies to finish cooling, then cut into 16 equal sized squares (or whatever size you like – they’re your brownies!)
  14. Take a bite and enjoy your lusciously smooth and decadent healthy turtle brownies!
