Healthy Dark Chocolate No-Bake Cookies

Say it’s so?!  You mean I can eat as many of  these as I want and not feel guilty?

And, the best thing? It truly satisfies you when you crave something sweet, rich and decadent. (which I often do!)

Cocoa and dark chocolate have a wide variety of powerful antioxidants, more than a lot of other foods. Add in rolled oats, almond butter and some almond milk and you have one helluva health kick going on!


Ingredients

  • 1/4 cup almond butter or peanut butter or your favorite 'nut' butter
  • 1/3 cup vanilla unsweetened almond milk
  • 1/2 cup dark chocolate chips I used Ghirardelli 60% Chocolate Chips
  • 1 & 1/2 cups old-fashioned rolled oats, quick oats or gluten free oats, I used Flahavan's Irish Oatmeal

Instructions

  1. Prepare a wax paper-lined baking sheet and set aside.
  2. Use microwave or heat almond butter, vanilla almond milk, dark chocolate chips in a saucepan over low heat until the chocolate melts.
