HOLIDAY PRALINE NO-BAKE COOKIES {THM-S, LOW CARB, SUGAR FREE}

A perfect holiday cookie – sweet and nutty with hints of coconut. This cookie will be a showstopper at any party!

Holiday Praline No-Bake Cookies (THM-S, Low Carb, Sugar Free)

I am so excited to share this recipe with you! You see, at my house, there is NO Christmas until after Thanksgiving. My husband  is very firm on this matter  (in a kind way, of course)! I have a best friend who thinks you should start Christmas celebrations in October at the latest. She recently moved two doors down from me, and I do think she has had an influence on my desire to celebrate early! (I was secretly playing Christmas music a couple of weeks before Thanksgiving.) But now, it is full on Christmas! I love this time of year – the reminder of our Savior’s birth is always special to me. It is a time to reflect on what His coming to earth means for each one of us, and a time to celebrate family.


Ingredients

  • 1/2 Cup Heavy Whipping Cream
  • 4 Tablespoons Unsalted Butter
  • 1/2 Cup Xylitol or the equivalent of your favorite sweetener
  • 1 Tablespoon Coconut Oil
  • 1 Teaspoon Vanilla Extract
  • 1 Cup Unsweetened Shredded Coconut you want finely shredded, not the large flakes
  • 1 Cup Chopped Pecans

Instructions

  1. In a large saucepan, melt Heavy Whipping Cream, Butter, Xylitol and Coconut Oil.
  2. Bring to a low boil and simmer for 10 minutes.
