Slow Cooker Butter Chicken

You’ll love this homemade butter chicken cooked in the slow cooker with an easy to make sauce.  It’s the perfect weeknight meal with very little hands on cooking time!

Ingredients:

  • 1 tablespoon olive oil
  • 1 yellow onion, diced
  • 1 jalapeño pepper, seeded and finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 teaspoons garam masala
  • 1 teaspoon chili powder
  • 1 teaspoon cardamom, can be replaced with 1/2 tsp cinnamon and 1/2 tsp nutmeg
  • 1/2 teaspoon coriander
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups chicken broth
  • 6 ounces tomato paste
  • 2 pounds chicken breast
  • 1/2 cup heavy cream
  • 3 tablespoon butter
  • 2 tablespoons corn starch
  • 2 tablespoons water
  • 4 cups cooked white rice
  • fresh cilantro for serving

Instructions:

  1. Heat the olive oil in a medium saucepan over medium high heat. Add the onion, jalapeno pepper, garlic and ginger and cook, stirring, for 3-4 minutes or until the onion is softened. Stir in the garam masala, chili powder, cardamom, coriander, salt and pepper and cook for another 30 seconds until fragrant.
  2. Remove from the heat and scrape everything into a blender. Add the chicken broth and tomato paste and blend until smooth.
