VEGAN TAHINI DATE COOKIES

Tahini and dates are two of my most favourite ingredients and I include them both in my diet regularly in every which way. From oats, to smoothies, to salads and whatever I can think off, dates and tahini are both staples in my diet.

Dates are my favourite natural sweetener because along with the sweet, caramel flavour they add to recipes, they’re also full of fibre, antioxidants,. vitamins and minerals. Now, yes, dates are very high in sugar so I do try to keep that love somewhat contained but that if your’e looking for a sweet treat, you’re much better off reaching for a few dates over processed candy or a traditional chocolate bar. Along with all that sugar, which makes dates a fantastic pre-workout or intra-workout snack, you’ll also be enjoying the many health benefits dates have to offer. Here are a few of their main health highlights.


INGREDIENTS

  • 1 1/2 cup (150 g) oats (use gluten-free certified oats if needed)
  • 1/2 cup (140 g) tahini
  • 1 1/2 cup lightly packed (260 g) pitted dates
  • optional: pinch of sea salt

INSTRUCTIONS

  1. Pre-heat oven to 350 degrees.
  2. Add all ingredients to a food processor or high-speed blender and process until it forms a thick dough.
