AVOCADO CHICKPEA PIZZA | VEGAN, GLUTEN-FREE RECIPE

It doesn’t happen very often that a week passes without me making pizza lol. My latest addiction is this avocado chickpea pizza with vegan cheese! It’s the perfect combo of healthy fats, proteins, and carbs, plus it tastes super delicious. Don’t believe me? Try it out for yourself!

Well, I made a buffalo chickpea pizza before, you can check it out on my Instagram account. However, something was missing…. it was the avocado which made this pizza even yummier. It’s important to add the avocado AFTER cooking though because I made the experience that cooked avocado tastes weird (anyone else noticed this?). The sauce is a little bit spicy if you add hot sauce (e.g. Sriracha) but it can be left out, of course.


INGREDIENTS

  • Bread:
  • 3 tablespoons ground chia seeds
  • 1/2 cup + 5 tablespoons water, divided
  • 1 tablespoon tapioca starch
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon coconut sugar (optional)
  • 1 package Simple Mills Artisan Bread Mix
  • Chickpea salad:
  • 1/2 ripe avocado
  • 1 15-ounce can chickpeas, drained and rinsed (1 1/2 cups)
  • 1 medium stalk celery, diced
  • 1/2 bell pepper, diced
  • 1 medium carrot, diced
  • 1 lemon, juiced
  • 3/4 cup strawberries, diced
  • 3 tablespoons plain hummus
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon pepper, plus more to taste
  • Desired sandwich toppings

INSTRUCTIONS

  1. Preheat oven to 350°F. Lightly grease a 7.5″ x 3.5″ loaf pan.
  2. In a large bowl, add ground chia seeds and 1/2 cup water. Let sit for 5 minutes.
