Hearty Wild Rice + Kale Soup

INGREDIENTS

  • for the soup
  • 1 cup wild rice uncooked
  • 3 cup kale uncooked
  • 5 stalk celery chopped
  • 1/2 medium white onion chopped
  • 4 clove garlic finely chopped
  • 8 ounce mushroom sliced
  • 4 medium carrot chopped
  • 4 cup chicken broth
  • 2 tablespoon butter
  • salt and pepper to taste
  • for the cream sauce
  • 6 tablespoon butter
  • 1/2 cup flour
  • 1 1/2 cup milk

INSTRUCTIONS

  1. for the soup
  2. In a large saucepan, melt the butter and cook the onions, celery and garlic for 3 to 5 minutes over medium heat
  3. Add carrots, rice, chicken broth, salt and pepper. Bring to boil
  4. Reduce heat and simmer for 35 minutes
