FUNFETTI CAKE MIX SANDWICH COOKIES

There’s a few special things about these Funfetti Cake Mix Sandwich Cookies that we’re sharing with you today.  They’re perfect for our blogiversary month for several reasons.

1.  They’re bright, cheerful colors.  Isn’t that cute? We knew we wanted to make a special treat using Maddie’s favorite colors…turquoise blue and a dark pink.

2.  They have sprinkles…because really, all celebrations need sprinkles! There was a point in time when Maddie didn’t want anything to do with sprinkles.  She’s come a long way and is full embracing the wonderful, colorful world of sprinkles these days!

3. The cookies are made with a cake mix.  We love cake mix recipes! We have bars, coffee cakes, quick breads and pancakes all made with cake mixes.  They’re so fun and versatile because of the many, many flavors of cake mixes out there!

Ingredients

• 1 Pillsbury Funfetti cake mix
• 1 large egg
• 4 ounces cream cheese softened
• 1/4 cup butter melted
• Pink food coloring
• 3/4 cup sprinkles
• Frosting:
• 1/2 cup salted butter softened
• 3/4 teaspoon vanilla
• 2 cups powdered sugar
• 1/2-2 tablespoons milk
• Food coloring

Instructions

1. Preheat the oven to 350 degrees.
2. In a small bowl, mix the cake mix, egg, cream cheese and butter until it is all well combined. Roll the dough into 1-inch balls. This makes about 44 balls. 
3. Roll the balls in sprinkles, then place them on a cookie sheet. Gently press down on the top of the balls to slightly flatten them.
