LOBSTER MAC & CHEESE

I’ve got a bit of a weakness when I visit seafood restaurants: Lobster Mac & Cheese. To be honest, I love lobster in just about any form, but I’ve got a soft spot for this cheesy dish.

Valentine’s Day was this past Sunday, and Andrew and I decided to cook a special meal at home rather than fight the crowds at a restaurant. We had ribeye for our main dish and I made this Lobster Mac for a side.
This creamy pasta dish is topped with panko bread crumbs and then baked to give it a crunchy finish. I always love the contrast that baked pasta dishes provide with the saucey pasta and crispy topping.
Lobster Mac & Cheese is perfect for a date night or other special meal! It’s a dish that is sure to impress your guests.



Ingredients

  • 1 lb pasta I used fusilli
  • 2 cups heavy cream
  • 4 oz cream cheese
  • 2 cups guyére cheese shredded
  • 2 cups of Trader Joe's Quattro Formaggio shredded cheese if you can't find this, it's a blend of parmesan, asiago, fontina and mild provolone
  • 1 cup lobster meat
  • 2 tablespoons olive oil
  • 1 teaspoon minced garlic
  • 1/4 cup panko bread crumbs

Instructions

  1. Preheat the oven to 350 F and grease a baking dish.
  2. Cook the pasta according to the directions on the package. Drain and set aside.
  3. Place the heavy cream and cream cheese in a medium saucepan and bring to a boil. As soon as it begins to boil, lower the heat and whisk in all of the cheese, a little at a time. Whisk until combined (the cheese mixture will be thick).
