PB2 PEANUT BUTTER COOKIES

So you may remember me mentioning a while back that I’m trying not to eat half a jar of peanut butter every day.
I’m doing pretty amazing with that, I must say. But I still crave peanut butter like the Sahara craves rain.
Knowing I’m a peanut butter-crazed fiend, my mom turned me on to PB2 which is basically powdered peanut butter with a lot of the fat left out. I don’t know how they do it, but it’s pretty awesome. And so far my favorite way to use it is in these PB2 cookies.

Ingredients
- 1/2 c unsweetened applesauce
- 1 tsp vanilla
- 1 Tbs flax meal mixed with 3 Tbs warm water (or 1 egg)
- scant 1/4 tsp salt
- 1/3 c coconut palm sugar or brown sugar
- 1 1/4 c PB2 or any powdered peanut butter
Instructions
- Heat the oven to 350.
- Line a cookie sheet with a baking mat or parchment paper sprayed with nonstick.
- Combine everything except the PB2 in a food processor OR a large mixing bowl. Pulse to combine or stir well.
