Spaghetti Squash Taco Boats

Ingredients
- 1 small spaghetti squash
- 1/2 lb ground beef
- 1/2 cup black beans*
- 1/2 tomato, diced
- 1/2 red pepper, diced
- 1/2 green pepper, diced
- 1 green onion, chopped
- 2 Tbsp fresh cilantro, chopped
- 2 Tbsp crushed tomatoes or tomato sauce
- 1 oz cheddar cheese, grated
- Taco Seasoning
- Optional Toppings
- Salsa
- Sour cream or yogurt
- Avocado
Instructions
- Preheat oven to 400F.
- Cut spaghetti squash in half, scoop out seeds and place face-down on baking sheet lined with parchment paper.
- Bake for 30 minutes.
