Strawberry Watermelon Popsicles

Syrupy sweet watermelon hits the spot on a hot day so imagine how refreshing it is paired with fresh picked strawberries, lemon juice and pungent mint in Popsicle form.

The key to this recipe is making sure you pick out the right watermelon. You want one that is sugary sweet and melts in your mouth.

It seems we go through a watermelon a week in the summer. Even the dogs come running when I am slicing the red, juicy fruit. I just absolutely love the flavor and even add it to salads and beverages all summer long.



No matter the size, the watermelon should feel heavy when you pick it up. Look for the buttery yellow spot where it sat on the ground during its growing season and finally, give it knock.

Ingredients:

  • 2 cups cubed seedless watermelon
  • 8 - 10 strawberries
  • 2 tablespoons sugar
  • 2 tablespoons lemon juice
  • Handful of mint leaves

Instructions:

  1. Using a blender, purée the watermelon, strawberries, sugar, lemon juice and mint leaves.
  2. Pour the purée into a Popsicle mold, add the wooden sticks and freeze for at least 4 hours before serving.
