THE BEST HEALTHY GINGERBREAD COOKIES

Oh Christmas time- the time where my diet consists of 99% holiday cookies and 1% eggnog. I’ve been on such a gingerbread kick lately that I can’t stop and I’m not sure I even want to! Plus when your cookies are this healthy, who says you can’t eat 2…or 4 in a sitting? Does anyone else have a cookie that they crave all year? I’m BACK! I’m so sorry for the lag in posts, I’ve been thinking of directions I wanted to take this blog and changes that I wanted to make- so slowly over the next few weeks I’ll be implementing all of those changes and making over this blog into something I think will be SO exciting. Speaking of changes, Max and I have decided to pursue photography full time (well, me full time at least) and start our own business! We’re in the process of making our website and stocking our portfolio but I finally feel like I’m going after my dreams and making those big moves I’ve been terrified to make.


WHAT YOU’LL NEED:

  • 1/2 cup of canned pumpkin (not pumpkin pie filling)
  • 1 egg
  • 2 Tbs honey
  • 1/2 tsp vanilla
  • 1/8 C coconut sugar
  • 4 tsp of baking powder (or 1 tsp baking soda)
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1/2 C almond flour
  • 1 Tbs coconut flour
  • dairy free chocolate chunks
  • dairy free chocolate chips
  • pinch of sea salt

STEPS:

  1. Preheat your oven to 350
  2. In a bowl, combine pumpkin, egg, honey, and vanilla and mix well.
  3. Slowly mix in the coconut sugar until well combined
