Mini Puff Pastry Sausage Rolls

n the UK, sausage rolls are a big favourite when it comes to party food for any kind of celebrations. The most popular filling is the pork one, but how about making the nation’s favourite bites a lot less heavy?
And with a seasonal flavour too, which makes these puff pastry sausage rolls the ideal finger food for Thanksgiving and Christmas. If you have fussy eaters, sneaking in some sweet potato is just the way to go (little ones won’t even know).

Now, not everybody likes cranberries, even the dried ones have a bif of that sharp sour taste, but but they make the perfect match with the sweet potatoes.

After making the turkey sausage rolls a few times, I have fallen in love with them, and I make them pretty often now. All you need is some puff pastry, turkey mince (ground turkey), a sweet potato, and a handful of dried cranberries.



This is the very basic recipe, from here you can add the herbs of your choice, I actually really like the Italian herbs for these sausage rolls, they go very well with the turkey.
If you want to top them with seeds, you can choose from poppy seeds, sesame seeds caraway seeds, anything that you like.

Ingredients

  • 1 puff pastry block (500 g, 1 lb)
  • 1 medium sweet potato
  • 250 g turkey mince (ground turkey)
  • 1/4 cup dried cranberries
  • 1 tsp Italian herbs
  • 1/4 tsp salt
  • 1 egg
  • sesame seeds and caraway seeds to top the rolls
  • Metric - US Customary

Instructions

  1. Preheat the oven at 180 degrees Celsius (360 Fahrenheit).
  2. Peel and grate the sweet potato, then add it to a bowl together with the turkey mince, cranberries, salt and Italian herbs. Mix well to combine.
  3. Flour the work surface, then use a rolling pin to roll the puff pastry block into a rectangle of approximately 35x25 cm.
