Candied Pecan and Caramel Mini “Baby-Cakes”

The resource I recommend is taking the online class “Will I Ever Sleep Again?” by Taking Cara Babies. Cara is a Nurse Practitioners whose specialty is helping babies sleep through the night. Her entire career is based on helping parents establish a schedule that is conducive to their lifestyle and to help your baby sleep through the night. I HIGHLY, HIGHLY, recommend the class. My husband and I were lost before we took her class. We thought we had it under control and accepted that our baby was just a baby and it’s natural for us to lose sleep. But that is so not true. Don’t get me wrong, you guys will have some sleepless nights for sure, but Cara teaches you guys a way where you don’t have to. By you working on your second book along with other opportunities you are working on, you need your rest momma. So take her class. My son didn’t sleep through the night for a while, but her recommendations made a HUGE difference in how he slept. He was sleeping 2-3 hours a time and with her recommendation, he started sleeping 5-6 hours at a time! We kind of started her schedule a little late (right when he was on the brink of the four-month regression) but if we started when we first brought him home I am sure it would’ve made a huge difference.



My advice is to take your time. Stop blogging. Do as much blog work as you can right now so when your baby comes home you can just be a mom. Create the infrastructure you need right now, that will support your time off. You don’t want to miss precious moments of your baby’s first few months of life. They are the most precious and important to establish a strong bond. I remember last year, I think it was a week or two before my son was born and my feet were swollen, my back was hurting, and I was exhausted I hauled ass and made as many recipes as I could and scheduled as many as I could before I gave birth. I had my best friend plan my social media post through Hootsuite and I did the best I could with everything I had going on at the time. Get this, I even brought my laptop with me to the hospital thinking I was going to get some work done. HA! Girl, I was tired as hell. At best, I checked my email and that was about it. I was idle for about 3 weeks ( I think) after I had my kid. I republished some older blog post to keep things current but I didn’t start baking new stuff for about a month. The point is, don’t feel pressured to make new content, be on Pinterest, make new recipe videos, and blah blah blah. Trust what you have put out in the world and that God will sustain the business you created until you FEEL LIKE getting back on your feet.

INGREDIENTS

  • 1 Yellow Cake Mix box
  • 3 eggs
  • 2 tbsp. Brown sugar
  • 2 tbsp. Butter
  • 1 tsp. Vanilla extract
  • ½ c. water
  • ⅓ c. oil
  • Dollop of sour cream
  • ½ c. pecan pieces
  • Glaze
  • 4 tbsp. Butter
  • ½ c. light brown sugar, packed
  • ⅓ c. heavy cream
  • 1 c. powdered sugar, sifted
  • Pinch of salt
  • Get Ingredients Powered by Chicory

INSTRUCTIONS

  1. Preheat oven to 350 Degrees. Spray Mini Bundt Cake pans with baking spray and set aside.
  2. In a large bowl, add the cake mix, eggs, brown sugar, butter, vanilla extract, water, vegetable oil, and mix until well combined. Add a dollop of sour cream and pecans and stir once more to blend well.
