Homemade Brownies

I am a brownie lover!  Are you???  I don’t think I  know anyone who really doesn’t love homemade brownies.  However, I have met a lot of people who don’t love making homemade brownies.  How can that be?  So many just buy a boxed mix and call it good.

I’ve made brownies from a box maybe once…might be stretching it to twice.  To tell you the truth, homemade brownies are super easy to make and so much better than the boxed kind.  The one time I made from a boxed mix, I thought, “This really isn’t any easier than from scratch.”  My challenge to you, if you haven’t made brownies from scratch is…Give it a TRY!!!

This brownie recipe is a new one for me.  I usually make a fudgier brownie, but a friend recently made me a brownie that was much cakier and I decided it was time to make some changes to my brownie. I played around with my original recipe and  I think I’ve found a winner!

These brownies are still chocolaty and moist but they have a bit more rise to them.  You wouldn’t classify them as a cake, but you could say they are a cakier brownie!


Ingredients

  • 1 Cup Butter
  • 4 oz unsweetened Chocolate cut into chunks
  • 2 cups granulated sugar
  • 3 eggs
  • 1/4 cups coffee
  • 2 teaspoons vanilla
  • 2 cups flour
  • 1/2 teaspoon baking soda

Instructions

  1. Preheat oven to 350
  2. In a large bowl add butter and chopped chocolate.
  3. Melt butter in chocolate in microwave. Only heat for one minute at a time stirring each time. This usually only takes two minutes total. Let mixture sit a bit until completely melted and then cooled.
  4. Add sugar.
  5. Mix in eggs and coffee and vanilla.
  6. Mix in flour and baking soda.
  7. Pour into a lightly sprayed 3 qt. glass baking dish.
  8. Bake for 35 minutes.
  9. Let cool completely before cutting and serving.
