Soft and Chewy Sugar Cookies with Cream Cheese Frosting

My favorite sugar cookies are made with my Grandma's recipe. They are soft and chewy and topped with delicious cream cheese frosting.

My oldest daughter needed to make some cookies to take to an activity. She wanted to make sugar cookies, so I decided it was the perfect time to share my favorite sugar cookie recipe. My daughter is 14 now and she is a great little baker. The other night, my youngest two daughters had dance pictures. By the time I got home, she had made dinner, complete with homemade bread sticks. These cookies were a collaboration between the two of us. The batter needs to chill several hours or overnight, so she made it the night before they were needed. She was gone much of the next day, so I baked and frosted them for her.

When I first started my blog, I would share a recipe {mostly desserts} every Friday. During that time, I shared the Best Ever Sugar Cookies. This is the same recipe - only with updated pictures and added tips. Go check it out if you want to get a feel for how I started out.

Sugar Cookie Recipe
1 c. butter, very soft, but not melted
1 1/2 c. sugar
3 eggs
1 t. vanilla
3 1/2 c. flour*
2 t. cream of tartar
1 t. soda
1/2 t. salt

Cream butter and sugar. Add eggs, one at a time, and mix well after each addition. Stir in vanilla. Add dry ingredients and mix well. *I almost always use more flour, about 1-2 cups extra - so it's like chocolate chip cookie dough* Chill thoroughly - 3-4 hours or overnight.

Roll out of floured surface. Cut out shapes with cookie cutters. Bake at 375 for 6-8 minutes.

Once cooled, frost with cream cheese frosting and add sprinkles if desired.

Cream Cheese Frosting Recipe
8 oz. cream cheese, softened
2 T. milk
5 c. powdered sugar
1 t. vanilla
a few drops of food coloring

Mix cream cheese with hand mixer. Add milk, vanilla and half of the powdered sugar and mix well. Add remaining powdered sugar. Add food coloring and mix well. I often separate the frosting into separate bowls before adding food coloring if I want multiple colors of frosting.

Tips for Soft & Chewy Sugar Cookies:
1 - For soft, chewy cookies you want to make sure you roll out your dough very thick - like 3/8 of an inch thick. It's tempting for me to roll them out thinner - because it will make more cookies, right? But I prefer soft, thick cookies, so I have to remind myself not to roll them out too thin.

2 - Bake them for less time. I generally bake them 7 minutes. They should not start to brown, but should not be gooey. Another thing I have done is to lower the temperature to 325 and bake them 8-10 minutes.

But wait, what if I like crispy sugar cookies, do I need a whole different recipe?

No, my mom likes her cookies crunchier and she has always used this recipe - just use the following tips.

Tips for Crispy Sugar Cookies:
1 - For crisp sugar cookies you want to roll out the dough much thinner - less than 1/4 inch.

2 - Bake them longer - bake them until the edges start to brown a little. Since they are thinner, they will bake quicker and will only need an extra minute or two for a total of 7-9 minutes.
