Strawberry Yogurt Jello

This morning, I woke up and thought how strange it was that it was so light outside. Usually when I wake up at 5:40 am to get my kids ready for school, it’s dark out. Then my brain went into crazy mode when I looked at my clock and saw that it was 7:08 am. My two oldest kids’ bus comes at 6:40 am so that was gone and my 7-year-old daughter’s bus comes at about 7:10 am. I woke everyone up by shouting how we slept in and to get up! I somehow got my daughter dressed and hair into a ponytail, shoes and coat on just as the bus pulled up to our house. Poor girl was basically torn from her bed and thrown out the door in two minutes. Good thing they serve breakfast at school.

Meanwhile my two oldest kids are getting ready and I am getting my 3-year-old out of bed and ready to get into our vehicle so I can drive them over the mountain and into town 30 miles away for their school. We had enough time for that, thank goodness. So everything turned out, but my poor Emma… I can’t even remember what her hair looks like. A messy, sad pony tail of some sort, that wasn’t even brushed.My husband left last night for Wyoming for work so he was no help. Being a mom is hard! Now I am back home putting this post together for you guys. Because look at that yogurt jello combo!


Ingredients

  • 3 oz package strawberry Jello
  • 1 cup boiling water
  • 1 cup vanilla Greek yogurt

Directions

  1. Mix the Jello powder with the boiling water, stirring until dissolved.
  2. Place the yogurt into a bowl and slowly stir in the jello mixture until well combined.
  3. Divide into 4 small containers or bowls, ½ cup per container.
  4. Refrigerate until set.
  5. Garnish with whipped cream and chopped strawberries, if desired.
