2 Keto Lemon Cheesecakes With and Without Crust

Today we want to share with you our simple low carb baked lemon cheesecake recipe. This dessert is very simple and delicious. Your friends and family will definitely love it. They won’t even know that it’s low carb!

Instead of using a 10-inch pan to make 1 large cake, we decided to make 2 smaller and different cakes using two 4-inch spring forms.
Cake #1 has almond flour crust and cake #2 doesn’t have a crust. The filling is the same for both cakes.

We just love experimenting different variations of low carb and sugar-free cheesecakes. You can follow this exact recipe or simply create your own version.


INGREDIENTS
For the Crust (for the 1st cake)

  • 2 tbsp butter
  • 1/2 cup almond flour
  • 1 tsp vanilla
  • 1 tsp xanthan gum
  • 1 tbsp Erythritol

For the Filling (for both cakes)

  • 8 oz cream cheese
  • 2 eggs
  • 1/3 cup sour cream
  • 1 tsp xanthan gum
  • 1 tsp vanilla
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 2 tbsp Erythritol (depends on your liking)


INSTRUCTIONS
Making The Crust for Cake #1

  1. To make the crust for the first cake, melt butter and combine it with almond flour, vanilla, xanthan gum and sweetener. Mix well.
  2. Cover your form with parchment paper and distribute crust mix on the bottom of your form. Poke it with a fork.
