COFFEE CREAM BROWNIES

A creamy coffee frosting and a layer of chocolate makes these decadent homemade Coffee Cream Brownies a great dessert. Perfect pick-me-up after a long day of school or work!

Well, school has officially started for two of the BruCrew kiddos. Both of them set their alarms last night and were up and getting ready without any prompting from us. We’ll see if that happens after a week of classes has gone by.  I’m sure the nervousness from starting at a new school again fueled their start up this morning.


Ingredients

For the Brownies

  • 1/2 cup butter, melted
  • 1/4 cup dark cocoa powder
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 3/4 cup flour

For the Coffee Frosting

  • 3 Tablespoons heavy whipping cream
  • 1 1/2 teaspoons instant coffee granules
  • 1/4 cup butter, softened
  • 1/8 teaspoon salt
  • 1 3/4 cup powdered sugar
  • For the Chocolate Topping
  • 1/2 cup dark chocolate chips
  • 2 Tablespoons heavy whipping cream

Instructions

  1. Preheat the oven to 350 degrees. Line an 8x8 pan with foil. Spray with nonstick baking spray.
  2. Whisk together the melted butter and cocoa powder.
  3. Beat the sugar,eggs, and vanilla until light and fluffy. Add the chocolate butter mixture and mix again.
