LEMON BASIL FETTUCCINE ALFREDO

This Lemon Basil Fettuccine Alfredo is simply what pasta dreams are made of. Entirely, vegan, gluten free, and so incredibly satisfying.

I don’t mind a big bowl with creamy pasta. But hey, who does not love pasta?
I love to be creative with pasta recipes, as in my Vegetarian Fajita Pasta. Sometimes I even just need a spoon to enjoy a Spicy Tahini Pasta Sauce.


INGREDIENTS

  • 1 lb fettuccine  (I used gluten free)
  • 1 batch 3 Ingredient Vegan Cheese Sauce
  • 2 Tbs Nutritional yeast
  • 4 cloves garlic, minced
  • 1 lemon juiced  + the peeled zest
  • 1/3 cup basil, chopped
  • salt, pepper to taste

INSTRUCTIONS

  1. Combine the ingredients from my 3 Ingredient Vegan Cheese Sauce (vegetable broth, tahini and cashews) in the bowl of a blender. Add the lemon juice, zest, garlic, and nutritional yeast. Season with salt and pepper, then blend until really smooth and creamy.
  2. Start with a pot. Add water and cook the Fettuccine according the package directions. This will usually take around 13 minutes.
  3. Last and next, drain your pasta, then put them back into the pot. Add the prepared sauce and cook at medium heat for around 4 minutes until all mixed and warm.
