HIGH PROTEIN CHOCOLATE COCONUT CHIA PUDDING & WIAW

Basically only four ingredients (plus toppings) it is so incredibly flavorful and delicious you won’t know what to do with yourself or how to stop making it.  I ate this for breakfast, dessert and randomly throughout the day to satisfy my sweet tooth.  Another healthy make-ahead meal for the win!

Ingredients

  • 1 5 ounce container of greek coconut yogurt I like Trader Joe's or Siggi's, but any will work
  • 3/4 cup unsweetened vanilla almond milk or other non dairy milk
  • 1 scoop chocolate protein powder I used whey
  • 2 tbsp Chia Seeds
  • optional toppings - banana dark chocolate, coconut flakes, etc...

Instructions

  1. Combine first four ingredients in a bowl. Let sit overnight or for 12 hours (in the refrigerator) to let chia seeds swell and create the chia pudding texture.
