Oatmeal Chocolate Chip Cookies
As you may have heard (or seen in your insta and/or facebook feed), much of the East was hit by Jonas last weekend. In Pittsburgh we got a little of it, but not nearly as much as some of the other cities. As a fun experiment, I let my cat go outside in it. For some reason, she LOVES the snow. She is obsessed with it. I’ve created a monster. It wasn’t quite love at first sight though, and it took her a minute to get used to it. Here is a pic of her first attempt outside. She didn’t make it far:
While we didn’t get as much snow as I would have liked, I’ll take the 4 or so inches that we got. It was enough snow to make me feel entitled to curl up in blankets and make fresh cookies.
Since I was downing cups of hot chocolate like it was my job, I felt it was only appropriate to make chocolate chip cookies (for dunking purposes). I have made SO many chocolate chip cookies lately (see my cookie project). I decided to mix it up a little bit and throw in some oatmeal. These cookies were exactly what I wanted – gooey and melty and delicious and a perfect compliment to my hot cocoa.
The only issue I had with these cookies was that I almost ate all the dough raw…. it was that good (is that a real issue?).

Ingredients
- 1/2 c butter
- 1/4 c & 2 tbsp brown sugar
- 1/4 c & 2 tbsp granulated sugar
- 1 egg
- 1/2 tsp vanilla
- 3/4 c oatmeal
- 3/4 c flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp corn starch
- 12 oz chocolate chips (1 bag)
Instructions
- Preheat oven to 350 degrees.
- Cream the sugars and butter together in a medium sized bowl.
- Add the egg, and vanilla and mix until blended.
- In a small bowl, mix the dry ingredients together.
- Add the dry ingredients about a 1/2 cup at a time and stir until the flour mixture has been thoroughly blended.
