Snickers Cheesecake Bars

We interrupt today’s regularly-scheduled summer recipe to bring you a glorious dessert treat that can be enjoyed year round! I can assure you that these Snickers Cheesecake Bars are everything you could dream them to be…and so much more. Allow me to paint a picture for you (albeit, using candy bar bliss, as opposed to happy little trees)…

Imagine a crunchy, chocolatey, Oreo crust. Imagine a layer of rich, creamy cheesecake on top. Now imagine that decadent cheesecake is studded with chunks of chewy Snickers candy bars. And finally, to finish off the whole shebang, envision drizzling melted chocolate and gooey caramel all over the top, and then generously sprinkling with salty chopped peanuts. Friends, meet Snickers Cheesecake Bars!


Ingredients

  • 35 Oreos
  • 6 tablespoons butter, melted & slightly cooled
  • 24 ounces (3 8-ounce packages) cream cheese, at room temperature
  • 3 large eggs
  • 3/4 cup sugar
  • 1 tablespoon pure vanilla extract
  • 12-ounce package Fun Sized Snickers, chopped (about 20 Snickers, or 2 1/4 cup chopped)
  • 1/2 cup chocolate chips (milk chocolate or semi-sweet)
  • 1/2 cup caramel sauce (store-bought or homemade)
  • 1/2 cup roasted salted peanuts, chopped

Instructions

  1. Adjust rack to center position of oven and preheat to 325°F. Line a 9- by 13-inch baking pan with aluminum foil so that foil overhangs the sides.
