NO-BAKE CHOCOLATE PEANUT BUTTER OAT BARS

Ok people, I know I said that these were my favorite Christmas cookies of all time…but they have been de-throned. That’s right. These No-Bake Chocolate Peanut Butter Oat Bars are my new love. Yes, I have made them many times, but at this particular moment in my life all I want to do is eat these beauties all day long. For real, I shared one with my husband, and a bite with each of my kids….then ate the rest all by my pregnant self. #noshame

If you can’t tell, I’m all about quick and easy. These healthy no-bake chocolate peanut butter oatmeal cookies bars only take 10 minutes to put together! Then all you have to do is wait for them to set {the agony} and dive right in! They are gluten-free and you can easily make them vegan and refined-sugar free too!

I mean, just look at them. A thick band of chocolate peanut butter goodness layered between two buttery sweet oatmeal cookies {basically}…a girl’s cookie dreams come true.

These healthy no-bake oatmeal cookies are so easy to make and the recipe is very straightforward! They are everyone’s #1 pick when present on a tray of cookies…without fail! However here are a few notes to ensure your cookie-making success!


Ingredients

  • Oat Layer:
  • ¾ cup butter (or vegan butter substitute)
  • ½ cup packed light brown sugar (or coconut sugar)
  • ¼ tsp sea salt
  • 1 tsp pure vanilla extract
  • 3 cups quick cooking oats
  • Chocolate Peanut Butter Layer:
  • 1 cup semisweet or dark chocolate chips
  • 1 cup creamy peanut butter

Instructions

  1. Line an 8x8”square baking dish with parchment paper, set aside.
