Tiffany Jell-O Shots

- 1 1/2 c. champagne
- 1/2 c. lemonade
- 1/4 c. granulated sugar
- 4 envelopes gelatin
- 3 tbsp. blue Curaçao
- Cooking spray, for pan
- Coarse sanding sugar
DIRECTIONS
- Combine champagne, lemonade, and sugar in a saucepan. Sprinkle gelatin on top. Let gelatin soften for about two minutes to bloom, then heat mixture over low heat. Stir until gelatin has completely dissolved, about 2 to 3 minutes, then remove from heat. Stir in blue Curaçao.
- Grease an 8"-x-8" square baking pan with cooking spray. Pour mixture into pan and chill for 2 hours, or until firm. Invert jell-o onto cutting board and slice into 16 squares. Dip the bottom and bottom edges of each square in sanding sugar and serve cold.
