TOY LAND CUPCAKES

Bright and colorful cupcakes made with a yellow cupcake base, vanilla frosting and a Fruity Pebbles Mousse filling! These are perfect for a toy land party or even just a fun summer weekend!
Every year, we do a surprise “unbirthday” for my daughter which usually falls during the summer. It’s a fun way to have an extra celebration during the year 😉 This year it happened to coincide with the opening of Toy Story Land at Hollywood Studios so I couldn’t wait to make these cupcakes! I am a big fan of making desserts that reflect a movie or theme and not necessarily decorating them with character garnishes, so I wanted to make sure these cupcakes were bright and colorful! I really wanted to give them a playful and kid-centric vibe so that’s how the filling was born. The base is a moist yellow cake and the frosting is a sweet and creamy vanilla, but the best part is the inside…a Fruity Pebbles mousse. It is oh-so-good.


Ingredients

  • For the cupcakes:
  • 1 box Duncan Hines yellow cake mix
  • 4 eggs
  • 1 cup water
  • 1 box vanilla instant pudding mix
  • 1/3 cup + 1 tbsp vegetable oil
  • For the mousse:
  • 1 cup heavy whipping cream
  • 1 cup 2% milk
  • 1 box vanilla instant pudding mix
  • 1 cup crushed Fruity Pebbles
  • For the frosting:
  • 1 1/2 cups butter, softened
  • 6 cups powdered sugar
  • 1 1/2 tsp vanilla extract
  • 3-4 tbsp water or cream
  • yellow food coloring
  • blue sprinkles

Instructions

  1. Preheat oven to 350 degrees and line a cupcake pan with red cupcake liners (or the color of your choice).
  2. In a large bowl using a mixer, combine the cake mix, oil, eggs, water, and pudding mix until well blended. Pour the batter into the liners and bake for 18-20 minutes, according to the package directions. 
  3. Let the cupcakes cool in the pan for a few minutes, then move to wire racks to finish cooling. 
  4. Meanwhile, prepare the mousse. In a bowl using a mixer with a whisk attachment, mix the heavy cream, milk, and pudding mix until thickened. It should resemble whipped cream. It will take a few extra minutes to thicken due to the milk, but it will get thicker and form peaks. Fold the crushed Fruit Pebbles into the mousse and set aside. 
  5. Using a knife or cupcake corer, remove the center of each cupcake. Make sure that you don't cut all the way down to the bottom. You just want to make a "well" for the mousse. It should be about 1".
