Banana Coconut Cookies

I’m all about easy when it comes to the kitchen. From breakfast to dinner, I try to spend as little time prepping meals as possible. With 5 kiddos running around, plus homeschooling, gardening, chicken-wrangling, and the work that goes into this blog, I don’t have a lot of spare time to spend making complicated recipes.

But that’s just the way being a mom goes, isn’t it? And of course I wouldn’t trade it for all the time I could spend baking elaborate gourmet dishes!

When I first published these Banana Coconut Cookies 2 years ago, I was just sharing my latest easy treat with you all. But they quickly became one of the most popular recipes on my site! And with good reason. With only four ingredients, and two of them optional, these little cookies are about as easy as you can get.

INGREDIENTS

  • 2 bananas, mashed (about 1 1/2 cups)
  • 1 1/3 c. shredded coconut
  • 1/4 c. cocoa powder
  • 2 T. coconut flour
  • 1/4 c. chopped nuts (optional)
  • 1/3 c. chopped dairy-free chocolate or dairy-free chocolate chips (optional)

INSTRUCTIONS

  1. Preheat oven to 350.
  2. Mix everything in a bowl. Let sit for a few minutes so the coconut flour can soak up some of the liquid in the bananas.
