Creamy Italian Parmesan Subs

 Hello everyone!  We had a crazy few days which meant our menu plan for the week pretty much got thrown out the window in favor of SUPER QUICK & EASY!  (In fact, last night was Peanut Butter & Honey Sandwiches!)  I am so thankful for an arsenal of easy to prepare meals with minimal ingredients during a hectic time!  These Creamy Italian Subs we had tonight are JUST THAT!  They were on the table in less than 15 minutes and just as good as we remembered!  What puts them over the edge, is the ‘semi-homemade’ creamy Italian Parmesan dressing.  Give them a try and let me know what ya’ll think!



Ingredients

  • 1/4 cup of your favorite bottled Italian Dressing
  • 1/4 cup mayonnaise
  • 1/2 tsp parsley
  • 1/4 tsp garlic powder
  • 1 TBSP grated Parmesan cheese
  • Sub rolls
  • sliced provolone cheese
  • thinly sliced smoked ham
  • salami
  • pepperoni
  • Toppings of your choice: We like lettuce, tomato, red onion, black olives and pepperoncini peppers

Instructions

  1. Whisk together Italian dressing mayonnaise, parsley, garlic powder and Parmesan cheese. Refrigerate until ready to use.
  2. Place the sub rolls on a cookie sheet. Toast under the broiler, watching it closely! Flip over and toast the other side! Top both sides with provolone cheese. Make sure to cover all of the bread so the already toasted bread doesn’t burn! Cover 1 side with the ham, then salami, and the pepperoni. Place back under the broiler until the pepperoni starts to crisp up and the cheese is melted. Set out the Veggie toppings and Creamy Italian Parmesan Dressing! Layer on the Creamy Italian Parmesan dressing and whatever veggies you like and ENJOY!!!
