Easy Cinnamon Spice Apple Bread

The twins will be three in less than a week and Millie has decided to get stubborn when it comes to food. She’s always been my “good eater” so it shocked me when she down right refused to try a bit of this apple bread. It’s full of soft chunks of peeled apples, brown sugar and cinnamon…what child wouldn’t love that? But she refused.

So I cut a piece into small bite sized pieces and left it sitting there on the table for her. No pressure, just sitting there like toddler bait. Would she take it?

I walked away to the kitchen and a moment of silence later I peeked around to see her happily nibbling away at the apple bread. There were a few quite “mmm’s” coming from her so I slipped away before she spotted me. As I suspected, no one (not ever stubborn toddlers) can resist this moist and delicious apple bread!


INGREDIENTS

  • ½ cup unsalted butter
  • ½ cup light brown sugar
  • ½ cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ½ cup whole milk sour cream
  • 1½ cups all-purpose flour
  • 1½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 3 cups peeled and diced apples

INSTRUCTIONS

  1. Preheat oven to 350 degrees.
  2. Butter and line a standard loaf pan with parchment paper, set aside.
  3. In an electric mixer, cream butter, brown sugar and granulated sugar together until light and fluffy.
  4. Add eggs and beat until combined, scraping down sides of the bowl.
  5. Mix in vanilla extract and sour cream.
