LOW CARB ALMOND FLOUR MUFFINS

If you are looking for a Low Carb breakfast idea, you have come to the RIGHT place!  I don’t know what I did before I discovered almond flour.  It has changed my LIFE!  This recipe for Low Carb Almond Flour Muffins is super easy to make & tastes GREAT!!
Don’t want them for breakfast??  No problem, these are great any time of the day.  Let’s say you make some chili, these muffins would go great with it.  Reminds me kind of like cornbread!!
This is how I love to eat my muffins.  I buy frozen organic breakfast patties (chicken and apple) and cut all my muffins in half.  I place the patties in the middle and put them in a container in the fridge.  You can also wrap them up and stick them in the freezer and grab one when you want!



Ingredients

  • 1-1/2 cup Almond Flour
  • 1/4 tsp Salt
  • 1 tbsp Baking powder
  • 2 Eggs
  • 1/3 cup Sour Cream
  • 4 tbsp Butter melted
  • 1/2 tsp Garlic powder
  • 1/3 cup Shreded chedder cheese optional

Instructions

  1. Pre-heat the oven to 400 deg. Grease your pan, or use muffin tins. Whatever works for you.
  2. Combine all the dry ingredients together in a bowl and set aside.
  3. Combine all the wet ingredients in a separate bowl and mix until combined.
  4. Add the wet ingredients to the dry ingredients and mix until well incorporated.
