INGREDIENTS
- FOR THE PASTRY
- 1 cup plain/all-purpose flour 125g
- 1/4 cup cold unsalted butter 56g, cubed
- 1/4 cup icing/powdered sugar 30g
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 1 - 2 teaspoons cold water
- FOR THE COOKIE
- 1/2 cup unsalted butter 115g
- 1/2 cup caster/granulated sugar 100g
- 1/4 cup light brown sugar 50g
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups plain/all-purpose flour 250g
- 1 teaspoon baking powder
- 1 teaspoon cornflour/cornstarch
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup chocolate chips 175g
- 12 teaspoons Nutella
INSTRUCTIONS
- Place 12 teaspoons of Nutella onto a baking tray lined with parchment paper, and freeze until solid - about 1 hour.
- FOR THE PASTRY
- Sift the flour into a large bowl. Add the butter and, using your fingertips, rub into the flour until the mixture resembles fine breadcrumbs. Stir in the sugar.
- In a small jug, or mug, lightly beat the egg yolk with the vanilla extract and water. Add to the flour mixture, and mix in using a knife. Gather together to make a soft dough.
- Wrap the dough in clingfilm, and chill for at least 30 minutes before use.
