Pecan Pie Bark
Every year, I have visions of Hallmark-esq holiday get-togethers that include all of my loved ones, cozy fires, delicious food, and of course, rich hot chocolate. Unfortunately, the reality never quite lives up to that. Generally, holiday gatherings include me running around like a chicken with its head cut off and dirtying every dish I own. In an effort to mitigate the chaos, over the past few years, I’ve started planning my holiday meals, including dishes I’ll need to take to someone else’s gathering, well in advance. This means, in the months leading up to the holidays, I become hyper food aware. I scour my go-to sites for tasty and easy holiday recipes that won’t leave me pulling my hair out and waist deep in dirty dishes. My latest find? Pecan pie bark.
This pecan pie bark is a twist on traditional pecan pie, and while I’ll never turn down a slice of pecan pie (you hear that mom!), this pecan pie bark does have a few notable advantages. For instance, it’s easier to feed a crowd with pecan pie bark than pecan pie. In addition, pecan pie bark is easier to transport than a bunch of pies.
Bonus: There are all different kinds of “bark” out there. If you’re looking for a chocolatey bark, try this M&M bark and if you’re looking for a healthier bark try this yogurt based bark.
Some other things I like about this pecan pie bark is that it is easy to break up into small pieces, meaning you can satisfy your sweet tooth with just a little bite (good luck with that!) 🙂 , and it doesn’t require a knife and fork to eat. There’s nothing quite like trying to balance a plate of pie, knife, and fork while standing up chit-chatting at a party, am I right?
INGREDIENTS
DIRECTIONS
1. Preheat oven to 325° and line a baking sheet with aluminum foil.
2. Spread graham crackers out on baking sheet.
Note: Break them apart if you need to to make them fit.
3. In a large heavy bottomed pot, combine sugar, vanilla, butter, and pecans.

4. Over medium-low heat, bring pecan mixture to a boil.
