THE MOST AMAZING COPYCAT NUTTER BUTTER COOKIES
Imagine 2 crispy peanut butter cookies filled with a creamy peanut frosting. These Copycat Nutter Butter Cookies are much better than the store bought kind since you can enjoy them in a bigger cookie with delicious flavor. Plus these are so much fun to bake! There’s nothing better than a homemade cookie.
Remember last week when I was trying to make a peanut butter cookie and forgot to add the granulated sugar? The result was a delicious crumbly soft cookie. Delicious by itself but my main mission was to make a thin crispy cookie with lot’s of peanut butter flavor like the original Nutter Butter. So after a few tries, I am pleased to say that I FINALLY mastered my technique and got the recipe just right. I ended up combining brown and white sugar together so I could have the depth of flavor with a crispy cookie.

Ingredients
- For Peanut Butter Cookies
- 1 stick unsalted butter softened
- 1/2 teaspoon vanilla extract
- 1-1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 cup smooth peanut butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 egg
- Pinch of salt
- For Peanut Butter Frosting
- 4 tablespoon butter softened (1/2 stick)
- 1/2 cup + 2 tablespoons of peanut butter
- 1 1/2 cups powdered sugar
- 2 tablespoons milk
Instructions
- For Cookies
- Preheat Oven to 375 Degrees Fahrenheit
- In a small bowl mix the flour, baking soda and salt. Set aside
- Using the bowl of a mixer, cream the butter and sugars together for 3-4 minutes until creamy. Scrape the sides of the bowl down with a spatula
- Add the egg, vanilla and peanut butter. Keep mixing on medium speed
- Slowly add the flour mixture and mix until the cookie dough is combined
- Line a cookie sheet with parchment paper or silicone mat
