CHOCOLATE MINT SLICE (NEW & IMPROVED)

I’m not usually one to mess around with a good old classic recipe… but this Chocolate Mint Slice is a huge exception to that rule. In fact, dare I say… I think I like this slice even better than the original!

So which classic recipe did I go all mint-crazy on?? Yep, it was my favourite Chocolate Coconut Slice (which, by the way, is also by far one of the most popular recipes on this site).

While I’d normally leave something totally delicious alone, this Chocolate Mint Slice had been an idea brewing in my mind for a while – and I knew I wouldn’t be able to get it out of my head until I at least tried it. Good call. Very, very good call.


Ingredients

  • 150 g butter
  • 200 g brown sugar 1 cup
  • 1 egg
  • 1 tsp vanilla extract
  • 1-2 tsp peppermint extract more or less depending on taste preference
  • 60 g plain flour 1/2 cup
  • 45 g self raising flour 1/3 cup
  • 30 g cocoa powder 1/4 cup
  • 40 g desiccated coconut 1/2 cup

Icing:

  • 265 g icing sugar 2 cups
  • 30 g butter
  • 2-3 tbs boiling water
  • 1-2 tsp peppermint extract more or less depending on taste preference
  • 1-2 drops green food colouring
  • extra coconut for sprinkling

Instructions

  1. Preheat oven to 160C (fan-forced).
  2. Grease and line with baking paper a 20x30cm lamington pan.
  3. Place butter, sugar, egg, vanilla and peppermint extract in a bowl, stir until combined.
  4. Sift plain flour, self-raising flour and cocoa into bowl, add ½ cup coconut.
