FUDGY COLLAGEN BROWNIES (AIP, PALEO, GLUTEN FREE)

Back in the day (my early twenties), on any given day, I could drink, like, seven mocha lattes before noon. I was wired. Overloaded with all the things I would find out later were making me sick.

So I guess you could call me a chocolate person. That chocolate person. And definitely not a carob person. I kinda thought carob was gross hippie bullshit. No offense to hippies or bullshit. But I had tried it a couple times on the recommendation of some of my new-age-ier friends and family, and I had proclaimed it with finality to be an inferior chocolate substitute – and all of them to be craze-balls.


These days, I don’t do coffee, chocolate, white sugar, or dairy. But that’s not going to stop me from attempting to recreate all those things in a way that is still actually satisfying. Rich, fudgy brownies were one of the things I missed most when I first eliminated chocolate from my diet. They were so easy and comforting, and I required a replacement. Not for every day, but just occasionally. Or, you know, maybe one whole week out of the month. So the nutrient intake had to outweigh the maple syrup.

Ingredients

  • 2/3 cup plantain flour
  • 2/3 cup carob powder
  • 2 tbsp carob powder
  • 7 tbsp collagen peptides
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 2 small bananas mashed
  • 6 tbsp maple syrup
  • 1/4 cup coconut oil melted
  • 2 tsp vanilla extract

Instructions

  1. Oil an 8x8 square baking dish (avocado or coconut oil works great).
  2. Gently mix dry ingredients in a bowl with a whisk.
  3. Add wet ingredients to the bowl, and stir gently to combine and moisten the dry ingredients (this is to keep the carob from flying everywhere in the next step).
