Peach Cobbler Bars

Peach Cobbler Bars will have you drooling over every bite! Here is another delicious peach recipe that tastes like Peach Cobbler but in cookie form! It has a tasty lemony crust and streusel and a lovely peach pie filling that’s so delectable. The combination of lemon with all the other ingredients was really spectacular and added a zest to this recipe that many peach desserts don’t usually have. The lemon wasn’t overwhelming, let me assure you, it was subtle, but just right. Every bite was chewy with a delicious cobbler texture.

I know by now you think I’ve gone off the deep end with peach recipes. Well, I really had a LOT of peaches to use up, so as I’ve stated in previous posts, I baked night and day for about three weeks total trying to use up all of our peaches. This one got stashed in the freezer so it could be given to friends when John is out visiting. Otherwise, I would have consumed all of it myself. Yikes. Yes, it’s delicious, but I don’t need 24 pieces!


If you want a scrumptious dessert to try out on company, this one is marvelous. The only time consuming part is paring and dicing up the peaches. The rest goes pretty quickly. I highly recommend you get yourself to the store and pick up some peaches now while they are still in season and easy to find. Then make this recipe. You don’t need an excuse. Just make it! But I warn you in advance, Peach Cobbler Bars are addictive. And, be careful, you may end up with food fights at your house as everyone elbows each other for the last piece! 🙂

INGREDIENTS

  • 1 1/2 cups sugar divided use
  • 1 tsp. baking powder
  • 3 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods
  • 1/2 tsp. salt
  • 2 large egg yolks
  • 2 sticks unsalted butter chilled (1 cup)
  • 3/4 tbsp. lemon zest
  • 1 1/2 tbsp. lemon juice divided use
  • 5 cups peeled and finely diced peaches
  • 4 tbsp. cornstarch
  • 1 tsp. cinnamon

INSTRUCTIONS

  1. Combine 1 cup sugar, baking powder, flour and salt in a mixing bowl.
  2. Add yolks, lemon zest and ¾ tbsp. lemon juice.
  3. Cut in butter with a pastry blender until coarse crumbs form.
  4. Press half of the mixture into the bottom of a greased 9x13” baking dish.
  5. Place peaches, remaining half cup sugar, cornstarch, cinnamon, and ¾ tbsp. lemon juice in a small bowl.
