FOOL PROOF CHOCOLATE BUNDT CAKE WITH FUDGE FROSTING

I’ve been making Fool Proof Chocolate Bundt Cake with Fudge Frosting for years, since we first got married. It’s the perfect solution when you’re looking for a cake that takes a few minutes to throw together with amazing results every single time.

When I first got married, I tried and tried to make a cake that didn’t fall in our SLC altitude. No matter how many recipes I tried, I could ever seem to get it right. Until I made this cake! My sister in law Sheri gave me this recipe, which I believe came from a friend? back in the early 80’s. I gave it a try because I thought there wasn’t anything to lose.

That was years ago, and it’s still a family favorite. We often make this cake on Sunday afternoons when we need to feed a lot of people, and there are varying ages attending dinner. Everyone loves this cake. Including the cook! It’s quick and easy and turns out every time. Adding sugar and sour cream, along with a few other ingredients makes this cake extra special. Ingredients

• 1 cake mix - chocolate (any name brand will work)
• 1 small box instant pudding, chocolate or vanilla (dry do not mix up before adding to other ingredients)
• 1/2 cup sugar
• 3/4 cup vegetable or canola oil
• 3/4 cup water
• 4 eggs
• 1 cup sour cream
• 1 cup (or about 1/2 package) chocolate chips, semi sweet
• Fudge Frosting:
• 1 cup (or about 1/2 package) semi sweet chocolate chips
• 1 tablespoon butter
• 1 teaspoon vanilla
• 1/2 to 1 cup powdered sugar
• dash salt
• milk to thin , usually 1-2 tablespoons

Instructions

1. Preheat oven to 350 degrees.Generously grease a bundt pan.
2.  Combine cake mix, dry pudding mix and sugar together in bowl.
3. Add rest of ingredients, mix until all ingredients are combined well (with mixer), about one minute.
4. Pour into prepared pan, and bake on middle rack of oven for about 50-60 mintues or until toothpick inserted in center of cake comes out clean.
