Rocky Road Cookies

I have a confession to make.

I hated chocolate as a kid. Like absolutely hated it, wouldn’t even go near it kind of hatred.

My family thought I was crazy, and I can’t blame them. Who doesn’t like chocolate? Anytime I’d go to a birthday party and say “no, thank you” to a slice chocolate cake because I didn’t like it, my friends would be in shock.

I mean honestly, have you ever heard of a kid who hates chocolate?


Luckily now, I’ve definitely grown out of my dislike for chocolate and am officially a chocolate fan. But let’s be honest, I will always be team vanilla.

But whether or not you’re team chocolate or team vanilla, you’re gonna wanna bake a batch of these cookies. They’re just that good.

Ingredients

  • 1 ¼ cup all purpose flour
  • 1/4 cup bread flour
  • ¼ cup cocoa powder
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ½ tsp cornstarch
  • ½ tsp salt
  • 1/2 cup 1 stick butter, softened to room temperature
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 1 egg
  • ½ tsp vanilla extract
  • ¼ cup chopped almonds
  • ¼ cup chocolate chips
  • 4 oz marshmallow fluff

Instructions

  1. In a mixing bowl, combine flours,cocoa powder, baking soda, baking powder, cornstarch, and salt.
  2. In a stand mixer with the paddle attachment, cream together butter and sugars until light and fluffy, about 2 minutes.
  3. Add in egg and vanilla. Mix until just combined.
  4. Slowly mix in half of the dry ingredients until combined, then add in the rest of the dry ingredients. Fold in the almonds and chocolate chips.
