Skinny Vegan Blondie Bites

Who doesn’t love chocolate chip cookies?

We have skinnied them up by replacing the sugar in our Vegan Chocolate Chip Cookie recipe with just a little pure maple syrup and portioned them into bites

The result: they’re still really good and we don’t really notice the absence of the sugar!

These can easily be portioned into cookies on a sheet. The muffin tin makes it quick & easy to do.


Make this recipe into 24 bites to get 52 calories & 2 Smartpoints for each.

Ingredients

  • 1 1/4 cup white whole wheat flour do not sub
  • 1/2 cup unsweetened applesauce
  • 1/3 cup *refined coconut oil melted
  • 1 cup non-dairy chocolate chips
  • 2 tbsp pure maple syrup
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1/2 tsp salt

Instructions

  1. Preheat oven to 350
  2. Melt coconut oil, then add applesauce, maple syrup and vanilla and mix well. 
  3. In a separate bowl, mix flour, baking soda and salt. Add to dry ingredients to wet and mix- add in chocolate chips.
  4. Grease a 24 count mini muffin tin with canola spray or portion out 24 cookies for suggested skinny serving size.
