Skinny Vegan Blondie Bites
Who doesn’t love chocolate chip cookies?
We have skinnied them up by replacing the sugar in our Vegan Chocolate Chip Cookie recipe with just a little pure maple syrup and portioned them into bites
The result: they’re still really good and we don’t really notice the absence of the sugar!
These can easily be portioned into cookies on a sheet. The muffin tin makes it quick & easy to do.

Ingredients
- 1 1/4 cup white whole wheat flour do not sub
- 1/2 cup unsweetened applesauce
- 1/3 cup *refined coconut oil melted
- 1 cup non-dairy chocolate chips
- 2 tbsp pure maple syrup
- 1 tsp vanilla
- 1 tsp baking soda
- 1/2 tsp salt
Instructions
- Preheat oven to 350
- Melt coconut oil, then add applesauce, maple syrup and vanilla and mix well.
- In a separate bowl, mix flour, baking soda and salt. Add to dry ingredients to wet and mix- add in chocolate chips.
- Grease a 24 count mini muffin tin with canola spray or portion out 24 cookies for suggested skinny serving size.
