SUPER EASY BUTTERSCOTCH SELF SAUCING PUDDING

Let me introduce you to this super deliciously easy butterscotch self saucing pudding. Trust me… it’s pretty much the queen of winter desserts. Annnnnddd… given my love of all things dessert (especially in winter), this is right up there on my ‘love list’ right now. It’s totally a thing

So this little pud is going to take you on a little ride down memory lane. Why might you ask? Well, because there’s a fair chance that you ate it a whole lot when growing up. Yep, this easy butterscotch self saucing pudding is definitely an old fashioned classic.


Do you know what my favourite thing about this pudding is? Despite the fact that it tastes freaking delicious (of course!). It’s that it is the most budget-friendly dessert made entirely from pantry staples. This is the dessert you make on a Sunday night when you really neeeeed something sweet but there’s no way you’re making a trip to the supermarket. Think butter…. sugar… self raising flour… milk… egg… all total basics. Whoop whoop!

Ingredients

  • 1/4 cup (50g) brown sugar
  • 1 1/4 cups (190g) self raising flour
  • 100 g butter, melted
  • 1 egg
  • 1/2 cup (125g) milk
  • 3 tbs golden syrup
  • 1/2 cup (100g) brown sugar, for sprinkling
  • 1 tbs cornflour
  • 1 1/2 cups (375g) boiling water

Instructions

  1. Preheat oven to 180 degrees celsius. Grease a large baking dish and set aside. 
  2. Place the brown sugar, self raising flour, melted butter, egg, milk and golden syrup into a bowl and mix until well combined. Pour into the prepared dish. 
  3. Mix the remaining brown sugar and the cornflour together and sprinkle over the pudding base.
