(2-INGREDIENT) STRAWBERRY SODA CUPCAKES WITH LEMON CREAM CHEESE FROSTING

Okay, confession time. I hate frosting. With a passion.

I don’t mean I hate eating frosting… in fact, I love frosting. But frosting with frosting?? NOT my thing.

In fact, if you were to search cupcakes on YHE, you would find T-W-O cupcake recipes total. Two is not a lot of cupcakes for a food blogger who has been blogging for 3 years, guys!

I love making cupcakes and eating them but when it comes to making the frosting pretty? I #fail every time. Any tips you can give me on it would be appreciated. 😉


Today is another Mystery Dish recipe! The ingredients were given by the cutest Katie from Made to be a Momma. This was probably one of my most favorite ingredient list to date! (I think I say that every time though, ha!) Here’s the list: *Poppyseed *Lemon *Cream cheese *Hot sauce *Chicken *Orzo Pasta *Baby spinach *Coconut *Mushrooms *Ritz crackers *Fresh herbs ( any kind).

Ingredients

  • 1 (12-oz) can Diet 7-up, room temperature
  • 1 box strawberry cake mix
  • 1 cup coconut
  • 1 (8-oz) pkg. light cream cheese, softened
  • 4 Tbsp. room temperature unsalted butter
  • 2 cups powdered sugar
  • ½ tsp. lemon zest
  • ½ tsp. vanilla extract
  • 1 tsp. fresh lemon juice

Instructions

  1. Preheat oven to 350ºF. Line muffin tins with 18 mufifn liners and set aside.
  2. In a medium-sized mixing bowl, pour the cake mix. Pour the diet soda in slowly to the cake mix. Stir together with a whisk until all lumps are gone.
  3. Scoop batter into muffin liners, filling about ¾ full. Bake for 18-20 minutes, until a toothpick comes out clean. Let cool on a cooling rack.
