BLUEBERRY PIE RECIPE

Over the weekend I took my boys blueberry picking at a Southern Hill Farms which is close-by our new home. It was such a nice afternoon! The kids enjoyed seeing how the fruit grows and where their food actually comes from. We ended up picking about five pounds of fresh blueberries. Amazing!

While we were carrying around our buckets of blueberries my mind was racing with all of the things I could bake with the berries. I felt like Forrest Gump when he’s listing all of the things he could make with shrimp ha! I made blueberry muffins as soon as we came home…which disappeared in the blink of an eye. This was truly Farm to Table eating!


Then, I decided to make a fresh blueberry pie with some of the berries taking over my kitchen. The smell of fresh blueberries wafting through the air as the pie baked in the oven was pure heaven. The pie was absolutely delicious.

Ingredients

  • 4 cups fresh blueberries (washed and dried!)
  • 1/2 cup sugar
  • 1/2 cup all purpose flour
  • 1/4 cup lemon juice (preferably fresh squeezed)
  • 2 tbsp cornstarch
  • 1 pie crust
  • 1 egg whisked with 1 tablespoon half and half (milk or cream will work just fine, too)

Instructions

  1. Preheat oven to 400 degrees.
  2. In a large bowl mix together blueberries, sugar, flour, lemon juice, and cornstarch.
  3. Next, line pie plate with pie crust. Trim off any excess dough from the edges of the pie plate.
  4. Spoon the blueberry mix into the crust. Be sure fully scrape the bowl to include any and all of the juice and delicious goodness remaining inside of the bowl.
