FULLY LOADED SWEET POTATOES

Sweet Potatoes are my favorite vegetable. EVER. No seriously, ever. I have yet to find a single way that I will not eat them, but I won’t deny that my favorite way is loaded with things like marshmallows, pecans, cinnamon and brown sugar. And butter, of course.

I made these for dinner last night on the side of grilled steaks. I love that they are pretty hands off and only require about 5 minutes of work.

While I am cooking on the grill on the patio, it’s hard to keep running back into the kitchen to deal with the side dishes. I prefer to make things that are mostly hands off.



INGREDIENTS:

  • 4 large sweet potatoes
  • 6 tablespoons butter, sliced
  • 1/2 cup brown sugar
  • 4 teaspoons ground cinnamon
  • 1/2 cup chopped pecans
  • 2 cups mini marshmallows

DIRECTIONS:

  1. Preheat oven to 400°F. Wrap sweet potatoes with foil and place on a baking sheet. Bake for 1 hour, or until soft when squeezed.
  2. Remove sweet potatoes from oven, but leave oven on. Take sweet potatoes out of foil and return to baking sheet. Slice the center of the potato and press on the sides to create an opening.
